I learned about batch cooking's merits when I first started competing. There was a short time period between then and now when I stopped making batch cooking a priority and my body (and wallet) felt the difference. I've been a fan ever since.
What's not to like? I stay in control of what I'm eating, always have something healthy on hand, don't have to spend money on daily lunches, and get to test out new yummy recipes to add to my weekly rotation!
This Turkey Meatball Muffin recipe (that I adapted from Jamie Eason... see her original recipe here) has been in my rotation for a few years now... it is super easy, healthy and delicious!*
I've made a few tweaks to it through the years based on my ingredient availability and desire to spice it up a bit. Although I loved Jamie's original version, I sort of feel like mine might be a little more... YOU know...

Seriously, the beauty of this recipe is you can substitute and customize the add-in's to suit your taste and I'm sure they will still come out tasty. They are a great source of protein too. I typically pair them with either roasted sweet potato, brown rice or quinoa for a meal; however, they would also make a good pre/post-workout snack by themselves or even as a regular snack.

*Side note, just noticed when I linked to Jamie's recipe that I've only been using 1 pound of ground turkey in my recipe, not the 2 pounds of turkey that the original recipe calls for... Whoops! Time to wear my glasses while cooking :) Clearly, I still think they are good!
